Quick Honey Garlic Chicken
I thoroughly enjoyed this quick chicken dinner and of course I had to put my own spin on it. This is a one pan chicken recipe. I used two free range chicken breasts and cut them in half to make four servings. In place of red potatoes, I used butternut squash.

For the sauce, I left out the butter and brown sugar but kept the honey (raw local honey). I sprinkled the veggies with chopped pecans. I must say the dish tasted delicious. Steve (my hubby) put hot sauce all over his chicken so he has no idea how good it was, but he did enjoy the veggies.
This recipe is a great example of how you can take recipes online and change them up to suit your dietary needs. I would have preferred no honey but, since it’s called honey garlic chicken it only makes sense to keep it in the dish. Prep time was minimal so I can definitely see this as a mid-week dinner.
I can’t wait to try the spaghetti squash and meatball recipe I bookmarked on Facebook last week. Unfortunately, I have yet to find a spaghetti squash. I’m still on the lookout, though. Maybe I’ll find one tomorrow since I’ll be making a trip over to The Fresh Market.
